Mother’s Day Salmon Scrambled Eggs Ingredients

6 eggs

1/4 cup half-and-half or whole milk

1/4 teaspoon salt

1/4 teaspoon pepper

2 tablespoons butter

2 ounces smoked salmon

1 tablespoon finely chopped chives, for garnish


1. Crack the eggs into a fine-mesh strainer set over a bowl.

2. Use a spoon or ladle to force the eggs through.

3. Add the half-and-half or whole milk, salt, and pepper. . .

4. And whisk gently to combine.

5. Melt the butter In a nonstick skillet over medium-low heat.

6. Pour the eggs into the skillet. . .

7. And as they cook, slowly and gently push the egg mixture around with a wooden spoon or rubber spatula.

8. Give the salmon a rough chop. . .

9. And when the eggs are halfway done. . .

10. Throw the salmon into the skillet.

11. Stir the eggs around to cook them just a little more.

12. Sprinkle on the chives and serve the eggs while they’re still soft and hot.
