New Year Chocolate Mint Shooters

Ingredients for Chocolate Mint Shooters.

12 ounces semisweet chocolate chips

Very small dash of mint or peppermint extract

4 eggs, room temperature

1 cup strong hot coffee

1 cup heavy cream

1/4 cup powdered sugar

Small mint leaves


1. Place the chocolate chips and mint extract in a blender…

2. Crack in the eggs…

3. And blend for 15 or 20 seconds, until the chocolate chips are largely pulverized.

4. With the blender on medium speed, slowly pour in the hot coffee until it’s totally mixed in.

5. The mixture will be nice and thick!

6. Pour the mixture into a quirt bottle or other vessel with a small pouring spout and fill 24 shot glasses two-thirds full.

7. Continue until the glasses are all filled up…

8. Then chill them for at least 2 hours,until they’ve totally firm.

9. Whip the heavy cream with the powdered sugar until stiff, then place the whipped cream into a pastry bag with a large star tip. Pipe pretty dollops on the top of each glass…

10. Then place a small mint leaf on the top of each one.

11. Keep them in the fridge until you need them!

And make no mistake: You need them. Serve with demitasse spoons.

Makes 24 shooters.      HappNeYears!!!
